Marcona Pesto Orzo Salad with Smoked Salmon

Orzo is an excellent addition to a brunch, picnic, lunch or dinner. It is a great substitute for rice in nearly any recipe due to its versatility. Add it to salads, soups or stews and depending on the recipe, then pair it with your favorite Cava de Guarda Superior. Remember, the complexity of the recipe and its flavors will pair with the complexity of the Cava you decide to pour. This one, will pair to perfection with a Cava de Guarda Superior Reserva.

What you need:

16 oz Orzo
8 oz Smoked Salmon
2 1/2 cups Fresh Basil
1/4 cup Marcona Almonds
1/4 fresh Parmesan Cheese
1 cup Extra Virgen Olive Oil
1/2 bunch of Asparagus
1 clove of fresh garlic, chopped
Salt and Pepper to taste

What to do:

  • For the Orzo: Heat a pot of salted water and add the pasta once the water begins to boil. Cook until the pasta reaches al dente (6-8) or as the package indicates. Then drain the water as you would any other type of pasta, toss with olive oil and set aside.
  • For the Pesto: using a mortar or a food processor, combine all the ingredients, taste, adjust if needed, transfer to a glass jar and refrigerate if not using immediately.
  • Serve: Once the pasta has reached a room temperature, add the pesto sauce, the asparagus, toss it, serve with the smocked salmon and enjoy! The sauce will last a few days in the fridge, as well as the pasta. Enjoy with your D.O. Cava de Guarda Superior!
