Ricotta Flatbread with Zucchini, Caramelized Onions, Lemon & ConsorcioSerrano Ham

Creamy, savory, subtly sweet, and full of texture. Caramelized onions, tender zucchini, and silky ricotta meet a touch of lemon zest and delicate ConsorcioSerrano ham. Effortless and elegant—made for sharing (and going back for more). The bubbles balance the richness and refresh every bite.

Ingredients (serves 2–4)

  • 2 flatbreads (store-bought or homemade)
  • 1/2 cup ricotta cheese
  • 1 medium zucchini, thinly sliced
  • 1 large red onion, thinly sliced
  • 1 garlic clove, minced
  • 2 tbsp olive oil
  • Salt and red pepper flakes
  • 1 lemon (zest)
  • 6–8 slices ConsorcioSerrano ham
  • Drizzle with honey or agave
  • Fresh greens (arugula or micro greens)

Instructions

Preheat oven to 425°F.

Cook the onions over medium-low heat with olive oil and a pinch of salt until soft, golden, and caramelized (15–20 min), then set aside. Lightly sauté the zucchini with olive oil, salt, lemon juice, and red pepper flakes for 2 minutes.

Place the flatbreads on a baking sheet, drizzle with olive oil and garlic, and pre-bake for 5 minutes. Remove from the oven, spread the ricotta evenly, leaving a slight border. Top with the caramelized onions and zucchini, drizzle lightly with olive oil, and bake for 5 more minutes, until the edges are crisp and golden.

Remove from the oven and layer the ham on top so it gently warms without losing its delicate texture. Finish with lemon zest, herbs, and a light drizzle of honey or agave if desired. Serve warm.
