This fun and tasty recipe is simply irresistible. Cook it on the grill, kabob style or on the pan. Try to buy a pork loin cut with some fat, so it gets more juicy. The yogurt will make it moist and even more flavorful.

What you need:

  • 1 pound of pork loin, cut in 1-inch cubes
    (use the most tender area of the loin, usually has more fat)
  • 1/4 cup plain Greek Yogurt, whole milk
  • Juice of 1/2 lemon or 1 lemon if is small
  • 1 tablespoon dry oregano
  • 1 garlic clove, minced
  • 2 tbsp. extra virgen olive oil
  • Salt and pepper, to taste

What you have to do:

  1. Season the pork loin cubes with salt and pepper, then place in a resealable bag with yogurt, lemon juice, garlic, and oregano. Refrigerate overnight, or at least 4 hours.
  2. Remove pork loin cubes from the bag and discard the excess of marinade. Heat a sauté pan with olive oil over medium high and cook the marinated pork for about 2-3 minutes, each side, making sure not to overcook.
  3. Serve with a green salad, roasted peppers with parsley or tzatziki and pita bread.
