Shrimp Wrapped ConsorcioSerrano Taco with Avocado-Cilantro Sauce and Macha Honey paired with a Cava de Guarda Superior Reserva

Jamón ConsorcioSerrano adds savory crunch and elegance; the shrimp brings that delicate sweetness from the sea; and the avocado-cilantro sauce cools it down with a creamy touch. Then comes the final kiss: spicy macha honey and microgreens (or cilantro) to wake up your palate. Best enjoyed with a glass of Cava de Guarda Superior Reserva.

Ingredients (for 3 tacos):

  • 3 small flour tortillas
  • 9 fresh white shrimp, peeled and deveined
  • 9 thin slices of Jamón ConsorcioSerrano
  • Broccoli microgreens, to taste
  • 2 tsp extra virgin olive oil
  • Salt and pepper, to taste

For the avocado-cilantro sauce:

  • 1 ripe Hass avocado
  • 2 tbsp plain Greek yogurt
  • ¼ cup fresh cilantro
  • 1 tbsp lime or lemon juice
  • 1 small garlic clove
  • 1 tsp olive oil
  • Salt to taste

For the macha honey:

  • 1 tbsp salsa macha (or to taste, depending on heat level)
  • 2 tbsp agave honey

Procedure:

  1. For the avocado sauce: blend the avocado, yogurt, cilantro, garlic, lime juice, and salt until smooth and creamy. Keep chilled until ready to use.
  2. For the macha honey: mix the honey with the salsa macha until fully combined. Taste to ensure the heat level won’t overpower the wine pairing. Set aside.
  3. For the shrimp: wrap each shrimp with a slice of jamón. In a hot skillet with a bit of olive oil, sear the wrapped shrimp for 2–3 minutes per side, until golden and the ham is crispy.
  4. To assemble the tacos: warm the tortillas on a griddle or skillet until hot and lightly toasted. Immediately spread a base of the avocado sauce on each tortilla. Add three shrimp per taco, drizzle with a bit of macha honey, and finish with broccoli microgreens. Serve immediately accompanied by a glass of Cava de Guarda Superior Reserva.
