Pork Loin Marinated in Coriander, Orange & Agave Honey

This pork loin is simply “sabroso”. You cans serve it with the salad on the side, with rice, veggies and even tostones, yuca or baked potatoes. Actually the salad is so good that you can eat it by itself. Try it, experiment in your kitchen and then tell me how you served it... "buen provecho"!

For the salad

What you need to have:

  • 5 oz. previously washed spinach
  • 1/4 cup olive oil
  • 8-10 fresh strawberries
  • 1 spoon of balsamic vinegar
  • 1 spoon of agave honey
  • Salt and pepper to taste
  • Fresh cheese or goat cheese and Marcona almonds (optional)

What you need to do:

  1. In the blender mix the oil, strawberries, vinegar, agave and salt and pepper to taste and leave on the side while you mix the other ingredients.
  2. Serve the spinach with the dressing, cheese, almonds and if you wish, add more strawberries thinly sliced.

For the pork

What you need to have:

  • 2 pounds of pork loin
  • 1 spoon of agave honey
  • 1 teaspoon of oregano
  • 1 spoon of crushed coriander seeds
  • The juice of one orange (1/3 cup approximately)
  • Salt and pepper to taste
  • 1 spoon of oil (to cook the pork)

What you need to do:

  1. Preheat oven at 400 degrees.
  2. In a deep small container, mix the agave, oregano, coriander seeds, the juice of one orange and leave on the side.
  3. Place the pork loin in a small baking container (so that all of the marinade has contact with the pork loin) add the marinade and salt and pepper to taste
  4. Cover and place in the refrigerator for 30 minutes.
  5. In a frying pan at high temperature, add the spoon of oil, once hot, sear the pork loin until it is golden on each side (1 minute or less).
  6. Now put it in the oven for 20 minutes or when it reaches 150 degrees (using a termometer).
  7. Remove from the oven, cover with aluminum paper, let it sit for 5-10 minutes until you are ready to serve it with the salad.
