Arañitas (“Little Spiders’’ Green Plantain Fritters)

To try this dish you CAN NOT be on a diet! It is everything but dietetic, but the “sin” is worth it. Arañitas are only and exclusively known by Puerto Ricans and I would say they’re a crispier and funnier variation of Tostones (Patacones). You can have them as a side dish or appetizer.

What you need to have:

  • Very green plantains
  • Canola oil
  • Olive oil
  • Smashed or minced garlic
  • Dry parsley
  • Salt to taste
  • Garlic powder

What you need to do:

  1. Peel the plantains.
  2. Shred them using a manual shredder like a micro plane but using the wider side
  3. Then put the shredded plantain in water with adobo (Latin seasoning), salt and lots of garlic powder… the seasoning in the water has to be very strong, much saltier than you can handle in order for the plantains to absorb the flavor. Leave them in the water for 15-20 minutes.
  4. Then heat the canola oil in a pan at high temperature. When it is really hot, start dipping the shredded plantain, forming flat little “balls” with the “dough” of the plantain. They can’t be “perfect balls” and can’t have a thick center inside. Look at the picture to check the right shape.
  5. Let them fry well and don’t move them a lot. Once they’re really golden, take them out of the hot oil and let them dry on a plate over a paper towel.
  6. You can make a “mojito” (sort of chimichurri) with olive oil, salt, garlic, minced garlic and a little bit of dry parsley. Drizzle over the arañitas with that mojito to give them more flavor and make them look better.
