Celebrity chef, Doreen Colondres, will present Iberian ham at the Culinary Institute of America for San Antonio’s 300-year anniversary.
“The ham brings us excitement and joy, but before, we must know and value it,” said the ambassador chef of the prestigious Spanish brand, Fermín Ibérico.

Doreen Colondres, chef ambassador of the prestigious Spanish brand Fermín Ibérico, will give classes at the Culinary Institute of America and Hotel Emma as part of the festivities that Foods from Spain organizes to celebrate Olé in the culinary Pearl area of San Antonio, Texas.
Olé San Antonio is a summer festival that celebrates the Spanish heritage of San Antonio, commemorating the 300-year anniversary of the city. Olé is being held until September 16 and hosts events related to three main pillars: gastronomy, music, and art.
The events to celebrate the traditions of the Jamón Ibérico will be August 22 to 24. Consumers, chefs and industry professionals can reserve their space ahead of time.
“The ham is meant to be savored—it awakens within us excitement and joy—as it happens with a great wine. But for that, we have to understand and value it,” Colondres says about the Iberian delicacy, a subject to which she dedicates a complete chapter in her book, La Cocina No Muerde.
Doreen, recently returned from the Ribera del Duero wine region in Spain, where she was certified, with merit, with the prestigious level 3 of the WSET (Wine & Spirit Education Trust), one of the most prestigious schools in the wine industry. This means she has become one of the very few chefs with merit in the world.
Colondres has definitely earned her participation in September at the James Beard Celebrity Chef Tour, where she will cook with other talented chefs from all over the country. Doreen has been very active in 2018—we have seen her designing recipes for Barilla, making fun videos of her recipes for the National Pork Board, and even cooking at Disney for kids with diabetes, as part of her work as a chef ambassador for Novo Nordisk Pharmaceutical.
