Butifarra de pavo peruana  - simple recipe - The Kitchen doesn't Bite - Doreen Colondres

Un platillo muy típico peruano, yo diría que para el más hambriento de la casa. Me encanta por su diversidad de sabores, temperaturas y texturas. Es una de esas recetas perfectas para cualquier época, incluso con los sobrantes del pavo durante as fiestas de otoño e invierno.

Lo que debes tener:

  • 4 panes medianos estilo baguette o bolillo
  • 4 hojas de lechuga
  • 1/2 libra de finos filetes de pechugas de pavo
  • 8-10 rodajas finas de papa dulce fritas o asadas (camote, batata)
  • 1/2 cebolla roja cortada en finas lascas
  • 1 tomate cortado en finas lascas
  • 2 cucharadas de cilantro picado
  • 2 cucharadas de mayonesa
  • 1/2 cucharada de puré de ají amarillo
  • Jugo de 1 limón
  • 2 cucharadas de aceite de oliva
  • Sal y pimienta la gusto

Lo que debes hacer:

  1. Sazona los filetes de pechuga con sal y pimienta.
  2. En un sartén en temperatura mediana alta, agrega una cucharada de aceite de oliva y cocina las pechugas de pavo por ambos lados y luego sirve y deja al lado.
  3. En un plato profundo, mezcla todos los ingredientes de la salsa criolla: la cebolla, el tomate, el limón, cilantro, una cucharada de aceite de oliva, sal, pimienta y deja al lado.
  4. En otro envase mezcla la mayonesa con el ají y deja al lado.
  5. Luego procede a montar la butifarra: corta el pan por la mitad, añade la mayonesa al pan, agrega la lechuga, la papa dulce, el pavo en pedazos pequeños, la salsa criolla y luego sirve con más ensalada al lado.
