Moms and dads, summer is here and, yes, our children will be home all the time! It's the perfect opportunity to have fun as a family, starting in the kitchen. Try new, fun, tasty and all-around good-for-you meals you can prepare together. Here are some ideas for kids of all ages to help you escape from the food routine this summer:
Simple, colorful, and fun. Cover pita bread with mozzarella cheese, cream cheese or goat cheese, and add shrimp or crab, some cilantro, and a bit of lemon zest. Another option may be to make a classic margherita pizza with mozzarella cheese, fresh tomatoes, Bumble Bee® Prime Fillet® Albacore Tuna with Sundried Tomatoes and Olive Oil, and fresh basil. YUM!
A refreshing tuna wrap with a spinach or tomato tortilla will add flavor and color to kids’ plates. Combine tuna, Greek yogurt, fresh corn, lemon juice, and cilantro. Cut wraps into 3 to 4 pieces to create "mini burritos". Children will love them! It's a new and tasty alternative for filling up a wrap.
You can’t go wrong with baked tuna empanadas! Follow my step-by-step recipe to make this Mexican-inspired dish. For quick and delicious empanadas, use Bumble Bee® Prime Fillet® Albacore Tuna with Sundried Tomatoes and Olive Oil. So full of flavor, you won’t need any other sauce!
Imagine if you could make your kids love lettuce! Start with taco night and swap out flour or corn tortillas for fresh, crisp lettuce. Perfect with chicken, crab, shrimp, and tuna, just add mashed avocado, cilantro, lime juice, salt and pepper to taste – and you’re done! Consider using butter lettuce. It’s light and has a sweet taste that appeals to kids’ palates. Now they’re enjoying lettuce and you’ve made a convenient and tasty meal in minutes!
Check out my 20-minute recipe for Bumble Bee® Salmon Ravioli with Corn and Cilantro Sauce. You can transform ravioli to dumplings in just one step! Fold and seal the raviolis like you would do with dumplings or empanadas, then fry them using hot canola or sunflower oil. You can serve them with the same corn and cilantro sauce as my ravioli recipe, or consider dipping dumplings in low-sodium soy sauce. My favorite way to serve dumplings is to drizzle with agave honey and enjoy.
